Gingerbread

Shortly before the Christmas season we discovered that Bryce really liked gingerbread. Strange I know especially with his eating sensitivities and the limited foods he will eat. However, once we find something new he likes-we go with it. How we discovered his love for gingerbread is that he saw a package of little debbie gingerbread cookies in Walmart and asked me to buy them. He tried them and actually loved them. He would go through a box fast so I was buying them a lot. 

The weekend after Thanksgiving we were in Flowell for a baptism, Durgan (one of the cousins), and Bryce and I had some free time on our hands and I thought we would try to make our own gingerbread cookies. I googled a recipe and we went to work. The recipe was a winner. The cookies were the best gingerbread cookies ever. Everyone ate more than one and before we knew it every last cookie was gone.


The next week I once again made the cookies for my class to decorate, plus I made extras for home.


A few weeks later I made a double batch for a family Christmas party.


Seriously these are the best gingerbread cookies ever, and everyone who ate one agreed. They are soft and the perfect flavor.

Here is the Recipe we used
SIX SISTERS GINGERBREAD
INGREDIENTS

  • 3/4 cup margarine, softened
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup molasses
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ginger
  • 1 1/4 teaspoons baking soda
  • 3 cups flour
INSTRUCTIONS
  1. Cookies:
  2. Cream together margarine, sugar, salt, egg, and molasses. Then add in cinnamon, cloves, ginger, baking soda, and flour.
  3. If dough if too sticky chill for about 30 minutes.
  4. Mix all together. Roll out on a floured surface to about 1/4 inch thick. Cut with a cookie cutter shape. I used a 3 1/2 inch tall little gingerbread man cookie cutter.
  5. Place on an ungreased baking sheet. Heat oven to 350 degrees and bake for about 8 to 9 minutes. Cool for a few minutes on cookie sheet and then place on a cooling rack.
  6. Frost when cooled.

In keeping with our Gingerbread theme we also decorated a gingerbread house. This one we didn't eat. It was just for looks and made out of hard gingerbread, but Bryce was pleased with the activity.





Now we have one more item we can add to Bryce's list of foods he will eat. YAY! And also a new Christmas tradition. Next year I might have to make gingerbread and sugar cookies...usually I make sugar cookies every Christmas, but this year gingerbread took precedence and there was no time for sugar cookies.
